On the National Park Service web site for Canaveral National Seashore Florida the hours are stated under the heading "All Park - Canaveral Seashore" - Standard hours quoted are 6 AM - 8 PM with the Apollo Visitor Center open from 9 AM - 5 PM. The visitor center has a lot of useful information and several "touch" items which all ages will enjoy.

There are several kayak launches at Canaveral National Seashore (The Turtlemound is inside CNS). However, there is only a boardwalk from the Turtlemound parking area to the waters edge. I guess you could carry a kayak, but not sure park rangers would allow it. Once you get admission to CNS, you have free access to several kayak launches.
