May 13, 2023 · Best combo for a grilled cheese. American with cheddar is the best. My favorite cheeses in general are sharp cheddar, Colby jack, and habañero Colby jack or pepper jack (NOT jalapeño; it has to be habañero). BUT for a grilled cheese, I have to go with American slices too!!

The cheese will leak into the holes and brown and caramelize to the sandwich, creating a wonderful frico. If you move the sandwich before the cheese is browned enough though, it'll just melt all over the pan.
